It was my son's summer science project to make Blue Yakisoba noodles. We came up with the idea making Mt. Fuji 🗻

Mt. Fuji Yakisoba (Natural Blue Food Coloring with Red Cabbage)

Difficulty: Very Easy
Time: 15 min
Number of servings: 2

Ingredients:
2 packages Yakisoba noodles (steamed Chuka noodles)
200g (7oz.) red cabbage
200ml water
5g chicken soup stock powder
mayonnaise
Katsuobushi (bonito flakes)

Directions:
1. Slice the red cabbage.
2. Place the cabbage in a frying pan and add water. Cover and steam until soft.
3. Remove the cabbage leaving the purple cooking liquid and cook Yakisoba noodles. Then the noodles turn BLUE!
4. Season with chicken soup stock powder or any seasonings of your choice. Be careful not to add anything acid. I added pork then the blue color diminished. I recommend to cook meat and vegetables separately.
5. Heap up blue Yakisoba on a plate, top with mayonnaise, and garnish with bonito flakes.
6. Serve and eat red cabbage with dressing of your choice.

*If you pour over acidic lemon juice, Yakisoba turns pink!
